Roast Turkey with Apple Horseradish Glaze
12 to 16 pounds Honeysuckle White Whole Turkey
1 jar apple jelly
1/2 cup red currant jelly
2 teaspoons horseradish, prepared
Preheat oven to 325*F. Place Turkey on roasting pan uncovered. Bake at 325*F until the temp. reaches 170*F in the deepest part of the breast.
In a small saucepan, mix apple jelly, currant jelly over medium heat until warm enough to mix together. Add horseradish and remove from heat.
Brush glaze over breast every 15 minutes during the last 45 minutes of cooking. Serve remaining glaze with turkey. Makes 12 servings.

39. Potpourri is easy to make and you can create a scent just for the holidays. Mix together broken cinnamon sticks, dried orange peel, whole cloves, evergreen clippings and dried lemon peel. Half fill cellophane florists' bags and tie with a holiday ribbon.
40. A simple but useful gift for the reader friend or relative is the bookmark. Use your computer to design a pattern. You can usually get four to a standard sheet of card stock. Once printed, separate them, punch a hole near the top and tie on a small tassel. Crocheted or crosstitched bookmarks are always treasured too.
41. Apartment dwellers that love gardening will love the little herb gardens that come with everything. Attach mini-garden tools, watering can and gloves if they aren't already there.
42. For the person who has everything try a personalized rubber-stamp. You can design it yourself to reflect the person's hobby, profession or whatever. Do this early enough to get your design to a business-supply
store or rubber-stamp maker. There may be some ready-mades that you only need to have your person's name added to at stationery stores, business-supply centers or rubber-stamp stores.
43. An embosser is trendy too. It can be used to personalize paper napkins, stationery, books, etc. An embosser with the initials of the receiver looks really snazzy on the above items and may be purchased at
the same places as rubber-stamps.
44. Inexpensive cloth napkins are everywhere. Make a set an extra special gift by adding your personal touch. Add a monogram to each one with Crosstitch, embroidery, needlepoint or stencil. Stencil a seasonal design or applique on each napkin. If you're crafty, the sky's the limit. Include a set of napkin rings.
45. Remember the fun you had with snow globes. Boy was it easy to get lost in that little scene with snow falling. Well make some of these as gifts (great for the kids). You need jars- olive jars, pimento jars, and baby food jars are good ones. Little plastic figurines (they don't rust), some artificial greenery for trees, clear-drying epoxy, distilled water, glitter, glycerin, and oil paints in holiday colors in case the lids need painting. Roughen the inside of the lid with sandpaper then glue the figurines down with the epoxy. Fill the jar almost to the top with the water and add a pinch of glitter (not too much) and a dash of glycerin. The glycerin thickens the water and keeps it from "snowing" too fast. Screw the lid on tightly. Then shake, shake, shake. Some crafters have put some of the epoxy around the lid of the jar after screwing it on to avoid possible leaks.
46. Make a friend the "apple" of your Christmas. Select a large tart dish, fill it with the number of apples called for in an apple tart recipe along with the other ingredients and there you have it! A great gift that can be filled over and over.
47. Loose tea is so English. Fill an exotic box with it and include a whimsical tea infuser. There are so many on the market to choose from these days. Tuck in a recipe for scones to make the gift simply ducky!
48. The smell of lavender soothes the spirit. Stretch its calming affects when you give it as a candle or incense along with a CD that is equally as soothing. Color coordinate the holiday wrapping to set mood.
49. Someone taking a trip very soon? Make their holiday gift a travel kit. Fill a nice zipper case with a travel clock and travel size products you know they will need (toothpaste, shampoo, shaving cream, etc.) The time you used gathering this gift will hopefully give the receiver extra time for packing and getting to the airport!
50. You know someone who would just love to have one. Go ahead and give a gift from the East. Give a bonsai tree complete clippers, gloves and care instructions. While you're at it, get one for yourself.
51. Holidays mean food and reminiscing good times. Give a food basket that will remind the receiver of a favorite place or vacation. Make the wrapping paper using travel brochures or maps to hint at the treasure inside.
52. A mini Zen stone garden will put a taste of Japan in any home. These tiny gardens are inspired by the famous rock garden at Ryoan-ji in Kyoto, Japan. Just another way to bring the East into the receiver's life.

In Georgia right now the weather is just right for a picnic, not to hot not to cold. We do a lot of camping and grilling out places other than home. What I like to do is keep as many of our supplies as possible, packed and ready. It really makes life a LOT easier. So I compiled a list of things you may want or need for your picnic:
*Somewhere to sit, if no table is available, like an old bedspread or tablecloth--- to spread out on the ground
* A knife, spoons, eating utensils (I like to preslice anything I can and use plastic utensils)
* Plates, and cups (throw away is always easier on cleanup)
* Bottle opener,or corkscrew if needed
* Small salt and pepper shakers
* Garbage bags (always pack out what you packed in)
* Food storage bags for leftovers, or just serve your food from food storage bowls
* Paper towels, napkins, or wet wipes
If you think I have missed something or think I should add something, I would love to hear from you!

On our recent adventure trip to the mountains the kids all got to choose something they have never done before to try. Zane, Will and Kayla all tried bull riding on the mechanical bull in Cherokee, NC. The operator was great he was gentle on Kayla and Zane, but tried a little harder to throw Will.
Ansley wanted to try the Haunted Mineshaft, because she has never been in a haunted house before. Mattlyn went with her even though she goes to the haunted houses every October with me and Billy. There was one guy that worked it everything else was animated but I guess that guy was good at his job because she came out crying and swearing that she would never go to another one.
Melanie didn’t want to ride the bull or go to the haunted house, but she did try something new along with all the other kids. There were these giant beach balls that the kids got inside and were rolled into a pool. Standing was apparently very hard because none of them were good at it. If they could maneuver their ball enough they could bump into each other. They had a lot of fun and we really enjoyed watching them fall all over the place.
During this trip Melanie and Ansley also got to go up and rain dance with the Indians that perform in the middle of town. They had a ball! Thanks to their rain dance we found ourselves making new friends with all the motorcycle groups that also found themselves parked under the hotel and gas station awnings trying to avoid drowning. You meet some very nice people on the road sometimes.

The first day of school
Wow! Summer flew by, it feels like just yesterday last school year ended and now it is time to start all over. So here we are all full of hopes and expectations for the coming year. Making vows and setting goals-this year will be different. This will be the year when everyone does their work and we don't get phone calls from angry teachers. This is the year I am not screaming "BUS!!!!" at the top of my lungs. This is the year that the kids actually use the brains that the good Lord gave them for good, not evil. This isthe year everyone is in bed on time and up on time. This is the year I don't have one story about how stupid my kids school is! I can feel it, and I can't wait! Happy school year people!
For anyone that has not seen this blog, you really need to check it out. These parents thougt it would be funny to embarrase their son by waving at the bus ad like all great ideas it just grew from there.

Progreso, Mexico
Our first stop was in Progreso.

Progreso has a super long pier, so you have to get on a bus to ride to the end. On the bus they played American songs but with a Spanish accent. It tripped me out.
Once we got off the pier the town was small and kind of rundown, but you could see that it was once a beautiful place.
We did the most fun thing and probably a little of the dangerous side, we took a double-decker bus tour. That is where most of these pics were taken.
We were very close when we passed cars, trucks or people. It was a little scary. |
The power and phone lines are pretty low in the town so while we were riding along on top of the bus, the tour guide would yell "DUCK!" The lines were really only inches over the top of the bus. It was crazy!
That is a school behind our tour guide. He said it was an elementary school in the mornings and a high school in the afternoon.

Mexico part 1
So Billy and I took a cruise to Mexico for our honeymoon. (Thank you Kelli, Phillip, and Clairise C. for keeping the kids for an entire week, you guys are the best).
This time we left from Mobil, AL. All our other cruises we have gone from Florida. It was a little harder to find this port because you could not see the water. The GPS said "you have reached your destination" , and we looked around like where? We had to go up to a gas station to ask directions, which sent us right back to where we were. The boat was so huge it looks like a building, so we were right beside it and didn't realize . LOL
These are from the inside, in the atrium of the Carnival Ecstasy. Beautiful ship, and the staff was incredible. You just can not believe how nice these people are.
I don't know if Billy is taking a picture of the room or of himself. Our room was nice, we had a window and a comfy king size bed. What more can a honeymooner ask?
The water has the most unbelievable shades of blue. It is just amazing to me that this color exists in nature.
This was in port at progresso. There was another Carnival boat docked beside us. If you look at the people walking you can kind of get an idea of how big these boats are.
If you have never been on a cruise you should really try it, there is nothing like it! You have food, entertainment and a hotel all in one. If you drink or stay out later than you should it is easy to get home
(your room). AND best of all -no cleaning!
